In Dallas, we headed straight for the JFK Memorial and the Sixth Floor Museum. (Not to slight Dallas or Texas, but this was more of an on-the-way visit than a stop on the trip -- so there isn't much else about Dallas here.) The Sixth Floor Museum is fantastic -- very informative and moving. We highly recommend it, especially for those born after the JFK era (such as ourselves).
